Entity extraction (or slot filling) is pulling the specific pieces of information out of a caller's speech — a date, a name, an order number, an amount — that the agent needs to complete the task, like booking a slot for 'next Tuesday at 3'.

It works alongside intent recognition: intent tells you *what* the caller wants; entities tell you the *specifics*. Together they turn a sentence into a structured action.
